Sukhi's Chicken Curry
INGREDIENTS:
- Mary's Organic Boneless Chicken Breast
- 1 Tbsp olive oil
- Sukhi's Curry sauce packet of choice
- 1/4 cup cream or 5 oz yogurt
- 3/4 cup water
- 1/3 onion
- 3-4 carrots
- 1 cup Ralston Family Farms Basmati Rice
INSTRUCTIONS:
- Bring 1 1/2 cups water to a boil and cook 1 cup rice to package instructions.
- With clean hands, cut chicken breast into bite sized cubes. Set aside.
- Chop onion and carrots into 1/2" thick pieces. Set aside.
- Heat saucepan to medium heat. Add cubed chicken, onions, and carrots and sauté for about 3 minutes.
- Add water and cream (or yogurt) and your curry sauce of choice, then cover and simmer on medium heat until chicken is cooked (about 10 minutes).
- Plate curry aside rice, and enjoy!
