Steak, Mushroom and Gnocchi Skillet Dinner
Ingredients
Marinade:
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- ¼ cup Worcestershire sauce
- ¼ cup soy sauce
- 2 teaspoons Dijon mustard
- 2 teaspoons minced garlic
- 1 pinch salt and pepper
Skillet Dinner:
- 1 pound fresh Gnocchi
- 1 pound cubed beef
- 1 pound Crimini mushrooms
- 1 medium red onion
- 4 Tbsp unsalted butter cut into equal sized pats
- 1 clove garlic minced
- 1 Tbsp fresh parsley minced; garnish (optional)
Instructions
- In a bowl, mix all of the marinade ingredients together. Set aside.
- Dice the steak pieces in half or into bite-sized pieces if using a whole steak.
- Add the steak pieces into the marinade and toss to coat evenly. Set aside while you prepare the remaining ingredients. You want this to marinade for at least 20 minutes.
- Bring a pot of lightly salted water to boil, and cook the gnocchi per the package instructions then drain and set aside.
- Roughly chop or cute the onion into about 1" pieces and set aside.
- Remove stems from mushrooms, cut into thick slices and set aside with the onion.
- Using a cast-iron skillet (non-stick is not recommended) melt 2 Tablespoons butter on medium-high heat.
- Remove the meat with a slotted spoon, leaving as much marinade behind as you can. To get a good sear, you don't want the meat to be really wet.
- Add the steak bites to the skillet, without crowding them together (do this in two batches if necessary).
- Sear for one minute and flip over with tongs.
- Remove the steak onto a plate, and set aside.
- Add 1 Tablespoon butter, onion and mushrooms to the skillet and cook until softened and browned - about 3-5 minutes.
- Add the garlic, last Tablespoon of butter and the drained gnocchi to the skillet.
- Add the seared steak, and any juices to the skillet.
- Turn off the heat, and stir to combine evenly.
- Garnish with parsley if desired and serve hot!
