Smash Burger Sliders with Grilled Onions Recipe

Ingredients

  • 2 lb pasture-raised ground beef
  • salt and pepper to taste
  • 1 yellow onion, thinly sliced
  • 1 Tbsp olive oil
  • 2 Tbsp salted butter
  • 8 slices cheddar cheese, cut into quarters
  • 8 Brioche slider rolls

Instructions

  1. Portion out loosely packed balls of ground beef to 1.5oz each (or a small handful).
  2. Season with salt and place on a parchment-lined baking sheet uncovered in the fridge.
  3. Thinly slice onion and set aside.
  4. Heat a skillet to medium-high with butter and oil.
  5. Add onion to skillet and cook until brown and translucent; about 15 minutes; Cook before serving burgers, or place in an oven at the lowest temperature to keep them warm until ready to use.
  6. Heat up a griddle or cast-iron skillet on a stovetop on high heat until smoke is coming off.
  7. Place 2-4 ground beef balls onto the skillet at a time, smashing with a metal un-slotted spatula, carefully sliding the spatula off so that the burger stays pressed to the griddle.
  8. Let cook for about 2-3 minutes then firmly scrape the patty and flip.
  9. Add 2 quartered slices of cheese to the top of each patty.
  10. Once the cheese is melted, remove from the griddle.
  11. Stack once patty on top of another to double up (if desired), then place on your slider bun. Repeat until all sliders are done.
  12. Top with grilled onions and any of your favorite burger toppings and enjoy!
