Roasted Fingerling Potatoes
Ingredients
- 1 ½ pounds fingerling potatoes
- 5 cloves garlic, crushed
- 3 Tablespoons extra-virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
- Place a rimmed baking sheet on the middle oven rack. Preheat the oven to 450°F.
- Cut potatoes in half lengthwise and add to a large bowl. Set aside.
- Remove peel from garlic and crush. Add to bowl with cut potatoes.
- Add oil, salt and pepper to the bowl and toss to combine.
- Remove hot baking sheet from the oven.
- Spread potato mixture on the hot baking sheet and roast, stirring halfway through, until tender and golden brown, about 20 minutes.
- Serve hot!
