Quick Heirloom Tomato Salad

Prep Time: 10 minutes | Serves 4-6 *as a side salad

Ingredients

  • 1 pound heirloom tomatoes
  • 2 heads little gem lettuce (or 1 larger head of lettuce)
  • ½ small red onion
  • Red Wine Vinaigrette
  • ¼ cup extra virgin olive oil
  • juice of 1 lemon
  • ¼ cup red wine vinegar
  • 2 Tablespoons maple syrup
  • 2 cloves garlic
  • salt + black pepper
  • Instructions

    1. Combine all vinaigrette ingredients in a small jar and shake well to combine.
    2. Season to taste - If you prefer a sweeter vinaigrette, add more maple syrup to your liking.
    3. Wash and pat dry lettuce, then roughly chop and add to a large serving bowl.
    4. Thinly slice red onion and cut tomatoes into 1" thick wedges, then add to the bowl.
    5. Drizzle the salad with half of your prepared vinaigrette and gently toss to combine.
    6. Serve immediately with extra dressing on the side for everyone to dress to their liking.
