Mushroom & Sweet Potato Tacos

Ingredients:

  • 1-2 sweet potatoes, peeled & diced
  • .5# crimini mushroms, chopped
  • corn tortillas, warmed
  • 1 Tbsp Olive oil
  • 1 Tbsp chili powder
  • 1 ½ tsp ground cumin
  • 1 tsp sea salt and black pepper
  • ½ tsp ground paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp dried oregano
  • 1/2 red onion, diced
  • 1/3 cup water
  • shredded cheese, for topping
  • 1-2 tomatoes, diced *optional
  • 2 to 3 green onions sliced *optional

Instructions:

  1. Peel and dice sweet potatoes to bite size pieces, then roughly chop crimini mushrooms and onion.
  2. In a bowl, combine chopped veggies with olive oil and spices.
  3. Heat a skillet to medium-high, add seasoned veggies and sauté for 6 minutes.
  4. Add 1/3 cup water, then cover for 2 minutes.
  5. Sauté uncovered for 3 minutes. Warm tortillas up during this time.
  6. Top tortillas with cooked veggies, cheese, onion, cilantro and any other desired toppings.
  7. Serve immediately & enjoy!
