Last-Minute Side Salad
Prep: 5-8 minutes | Serves 4-6
Less than 10 minutes before dinner is going on the table and having an "Oh shoot, we forgot the salad" moment or are really wishing you had some veggies to include with the meal? Look no further than this insanely simple Last-Minute Salad. The ingredients below are a great combo, but really just a suggestion. The formula for a tasty Last-Minute Salad is: salad greens(literally any) + olive oil + citrus or vinegar + salt & pepper + any fruit or veggie or cheese or "crunch" item strikes your fancy. Toss it up and enjoy!
Ingredients
- 5 ounces mixed greens of choice
- kosher salt and ground black pepper, to season
- juice of half of a lemon
- 1.5 Tablespoons olive oil
- half of a red onion, thinly sliced
- 1 avocado, cubed
- a large handful of blueberries or any of the add-ins below
- optional add-ins of choice: veggies (sliced cucumber, grated carrot, diced tomatoes), toasted nuts (pine nuts, pistachios, sunflower seeds), cheese (crumbled goat cheese or feta, grated parmesan or pecorino), etc.
(If you have the time and want to be a little fancier) Red Wine Vinaigrette:
- 4 Tablespoons extra virgin olive oil
- 3 Tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or agave nectar or pure maple syrup
- ½ shallot, finely diced (approx. 2 Tablespoons)
- 2 cloves garlic, finely chopped or grated
- kosher salt and ground black pepper, to season
Instructions
- Wash and spin or pat dry mixed greens and add to a large salad bowl.
- Thinly slice onion and add to the bowl.
- Add remaining to the bowl with the greens and onion.
- Toss to coat. That's it!
