Kielbasa and Summer Veggie Kabobs

Prep Time: 25 minutes | Cook Time: 8 minutes | Serves 4-6

Prep is going to be the biggest piece of this recipe, but what's awesome is your dish load is small!

Start with your veggies and cut them all on the same cutting board using a chef's knife and add them to one large bowl (big enough to mix everything in) as you prep them. Then move on to your sausages, add them to the same bowl with the veggies and dump your seasoning blend in on top before mixing. Prep the skewers onto a foil or parchment double lined baking sheet, then take that out to the grill and while your skewers are cooking, wash your cutting board, knife and bowl and toss the first layer foil or parchment. By the time you're done washing the dishes, your skewers will be ready to pull off the grill - onto your fresh sheet of foil or parchment - and serve!

Ingredients

  • 2 packages Journeyman Meat Co Kielbasa (or your fave sausage)
  • 1 pound bell peppers
  • 1 medium red onion
  • 1 pound summer squash
  • 6 ounces Shiitake mushrooms
  • 4 Tablespoons extra virgin olive oil

Seasoning Blend

  • 2 teaspoons dried oregano
  • 1 tablespoon dried parsley flakes
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fine sea salt and freshly cracked pepper & vegetable oil (for grilling)
  • Optional: chopped flat-leaf Italian parsley

Instructions

  1. Preheat the grill to medium-high heat - about 450-500°F. If using wooden skewers, soak them in water while you prep the veggies to prevent splintering.
  2. Double line a large baking sheet with parchment or foil and set aside.
  3. Cut the peppers, onion and zucchini into 1" pieces and add to a large mixing bowl along with the mushrooms.
  4. Cut the sausages into 1" pieces and add to the veggie bowl.
  5. Add olive oil and seasoning blend and gently stir to combine everything.
  6. Layer the veggies and sausage on the soaked skewers and set on your prepared baking sheet.
  7. Soak a paper towel in vegetable oil, roll it up, and then using tongs, rub it along cleaned and completely heated grill grates.
  8. Place the skewers on the grill and close. Cook for 3-4 minutes and then flip on the other side and cook for another 3-4 minutes or until veggies and sausage are lightly charred.
