Honey Roasted Rainbow Carrots
Ingredients
- 3 Tbsp olive oil
- 3 sticks cinnamon
- 3 Tbsp honey
- 1/2 tsp ground cumin
- 1 lb rainbow carrots - tops on, trimmed and scrubbed
- 2 large shallots, trimmed and cut into 1/2" wedges
- Kosher salt and ground black pepper
Instructions
- Position a rack in center of oven and heat to 350°F.
- Heat the oil and cinnamon in a small saucepan over medium heat until cinnamon sizzles and becomes fragrant (~4 mins). Remove from heat and stir in honey, thyme, and cumin.
- In a large bowl, toss carrots and shallots with 1 tsp salt, 1/2 tsp pepper and the oil mixture. Transfer to a large rimmed baking sheet.
- Roast the carrots, tossing every 15 minutes or so, until browned and tender, 45 to 60 minutes.
- Serve alongside the Easiest Roast Chicken Ever.
