Homemade Tzatziki

Total Time: 5 minutes | Serves 4-6

Ingredients

  • ½ cup finely grated cucumber
  • 1 cup whole milk yogurt
  • 1 Tablespoon fresh lemon juice
  • ½ Tablespoon extra-virgin olive oil
  • 1 garlic clove, grated
  • ¼ teaspoon sea salt
  • 1 Tablespoon chopped fresh mint

Instructions

  1. Cut off one end of cucumber and, using a box grater, grate cucumber over a towel.
  2. Gently squeeze out the excess water.
  3. In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt and mint. Chill until ready to use.
