Grilled Veggie Foil Packets

Prep Time: 8-10 minutes | Cook Time : 20-30 minutes | Serves 4-6

Ingredients

  • 1 lb summer squash
  • 3 carrots
  • 3/4 lbs fingerling potatoes
  • 1 red onion
  • 2 garlic heads
  • 4 tablespoons extra virgin olive oil
For the spice mix:
  • 1 teaspoon dried garlic
  • ¼ teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 2 Tablespoons marjoram
  • ¾ teaspoon salt

Grill Instructions

  1. Preheat grill to medium-high.
  2. Cut the summer squash into 1" chunks and add to a large bowl.
  3. Peel (if you want) and slice the carrots, then cut into 1" pieces and add to the bowl.
  4. Halve the fingerling potatoes and add to bowl.
  5. Cut onion into rings or quarters and add to bowl.
  6. Drizzle olive oil over veggies and toss to coat.
  7. Trim the top of each garlic head (about ¼ to ⅓ – where the stem is) so that the cloves are exposed, then cut each head in half. The outer skin should easily come off at this stage. There is no need to remove everything, just the ones that go easily.
  8. Prepare the spice mix by combining all the ingredients in a small bowl.
  9. Sprinkle the seasoning over the veggies and give them a good toss until they are all coated evenly.
  10. Divide the veggies into 4 sheets of foil.
  11. Place garlic heads open-side down into the large bowl where the veggies were. Press down so the cloves soak up the juices (oil + seasoning) then place them in the middle of each packet.
  12. Wrap packets tight and place on a grill over medium heat; cook for about 20-30 minutes or until vegetables are tender.
  13. Serve hot!

 

Oven Instructions

  1. Preheat the oven to 400°F.
  2. Cut the summer squash into 1" chunks and add to a large bowl.

  5. Cut onion into rings or quarters and add to bowl.

  13. Bake them for 30-35 minutes or until the veggies are done.
  14. Serve hot!
