Grilled Tuscan Lemon Chicken Thighs
Ingredients
- 1 1/2 Tablespoons extra virgin olive oil
- 1/2 shallot, diced
- 1-2 cloves garlic, minced
- 1 1/2 Tablespoons Italian seasoning - or 1/2 Tbsp each dried thyme, rosemary, parsley
- 1 Tablespoon freshly squeezed lemon juice
- 1 Tablespoon lemon zest
- Kosher salt and freshly ground black pepper, to taste
- 1 pound boneless, skinless chicken thighs
Instructions
- Dice shallot, minced garlic, zest and juice lemon.
- Remove chicken from package and pat dry with a paper towel.
- In a large bowl, combine olive oil, shallot, garlic, Italian seasoning, lemon juice, lemon zest, 1 teaspoon salt, 1 teaspoon pepper and chicken.
- Using clean hands, mix to combine and set aside while your grill preheats.
- Preheat grill to medium-high.
- Drain chicken from the marinade, add to grill and cook for 5-6 minutes per side. The chicken is done when it has reached an internal temperature of 165°F.
- Serve with Charred Corn and Avocado Salad!
Note: If you are using an oven, preheat to 435°F and cook for 25 minutes.
