Grilled Tuscan Lemon Chicken Thighs

 

Ingredients

  • 1 1/2 Tablespoons extra virgin olive oil
  • 1/2 shallot, diced
  • 1-2 cloves garlic, minced
  • 1 1/2 Tablespoons Italian seasoning - or 1/2 Tbsp each dried thyme, rosemary, parsley
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 Tablespoon lemon zest
  • Kosher salt and freshly ground black pepper, to taste
  • 1 pound boneless, skinless chicken thighs

Instructions

  1. Dice shallot, minced garlic, zest and juice lemon.
  2. Remove chicken from package and pat dry with a paper towel.
  3. In a large bowl, combine olive oil, shallot, garlic, Italian seasoning, lemon juice, lemon zest, 1 teaspoon salt, 1 teaspoon pepper and chicken.
  4. Using clean hands, mix to combine and set aside while your grill preheats.
  5. Preheat grill to medium-high.
  6. Drain chicken from the marinade, add to grill and cook for 5-6 minutes per side. The chicken is done when it has reached an internal temperature of 165°F.
  7. Serve with Charred Corn and Avocado Salad!

Note: If you are using an oven, preheat to 435°F and cook for 25 minutes.
