Grilled Sweet Potato Spears

Prep Time: 10 minutes | Cook Time: 10 minutes | Serves 4

Ingredients

  • 1 lb sweet potatoes
  • 2 Tbsp olive oil
  • 1 1/2 tsp sea salt

Cilantro & Avocado Dressing:

  • 1 bunch fresh cilantro
  • 1 avocado
  • juice from 1 lime
  • 4-5 garlic cloves
  • 1 tsp salt
  • 1/3 cup olive oil
  • 1 tsp chili pepper flakes, optional

Instructions

  1. Preheat grill to high heat.
  2. Cut potatoes into 1" wedges.
  3. Brush potatoes with olive oil and season with 1 teaspoon of the salt.
  4. Arrange on grill, cut side down.
  5. Grill, turning occasionally until fork tender, about 15 minutes then transfer to a platter.
  6. Meanwhile, place all the dressing ingredients into a food processor: cilantro, avocado, lime juice, salt, garlic and olive oil. Save a few pinches of cilantro for garnish.
  7. Pulse for 30 seconds to a minute, until a smooth dressing forms.
  8. Drizzle the grilled sweet potatoes with the dressing. Top with fresh cilantro and serve family style.
