Grilled Sweet Potato Spears
Prep Time: 10 minutes | Cook Time: 10 minutes | Serves 4
Ingredients
- 1 lb sweet potatoes
- 2 Tbsp olive oil
- 1 1/2 tsp sea salt
Cilantro & Avocado Dressing:
- 1 bunch fresh cilantro
- 1 avocado
- juice from 1 lime
- 4-5 garlic cloves
- 1 tsp salt
- 1/3 cup olive oil
- 1 tsp chili pepper flakes, optional
Instructions
- Preheat grill to high heat.
- Cut potatoes into 1" wedges.
- Brush potatoes with olive oil and season with 1 teaspoon of the salt.
- Arrange on grill, cut side down.
- Grill, turning occasionally until fork tender, about 15 minutes then transfer to a platter.
- Meanwhile, place all the dressing ingredients into a food processor: cilantro, avocado, lime juice, salt, garlic and olive oil. Save a few pinches of cilantro for garnish.
- Pulse for 30 seconds to a minute, until a smooth dressing forms.
- Drizzle the grilled sweet potatoes with the dressing. Top with fresh cilantro and serve family style.
