Fresh Chimichurri

Fresh Chimichurri Recipe

Ingredients

  • 1-2 cups fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup diced onion
  • 3 garlic cloves
  • 2 Tablespoons red wine vinegar
  • 3 Tablespoons lime/lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Add all ingredients - except the olive oil - in a food processor or blender.
  2. Process until finely minced (take care not to turn it into a thick paste from over processing).
  3. Transfer the mixture to a clean bowl and pour the olive oil over the mixture.
  4. Gently mix to combine.
  5. Allow the Chimichurri to stand for 15 minutes, time permitting.
