Fresh Chimichurri
Ingredients
- 1-2 cups fresh parsley
- 1/4 cup olive oil
- 1/4 cup diced onion
- 3 garlic cloves
- 2 Tablespoons red wine vinegar
- 3 Tablespoons lime/lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1/4 teaspoon red pepper flakes
Instructions
- Add all ingredients - except the olive oil - in a food processor or blender.
- Process until finely minced (take care not to turn it into a thick paste from over processing).
- Transfer the mixture to a clean bowl and pour the olive oil over the mixture.
- Gently mix to combine.
- Allow the Chimichurri to stand for 15 minutes, time permitting.
