Farm Fresh Egg Scramble
Ingredients:
- 2 large eggs, slightly beaten
- 2 Tbsp. shredded mozzarella (or Toma or any desired cheese)
- 1 cup fresh kale, roughly chopped
- 1 Tbsp. Extra Virgin Olive Oil
- 2 cloves garlic, chopped
- 1/4 cup cooked quinoa (optional)
- pinch salt and pepper
Instructions:
- Heat olive oil and garlic in small frying pan over medium heat.
- Whisk eggs in a small bowl and pour into pan.
- Once eggs starts to cook add in the kale, cheese, quinoa and mix together. Continually crape with spatula until eggs reach desired level of done.
- Season with salt and pepper. Garish with more cheese and any fresh herbs you prefer.
