Easiest Roast Chicken Recipe Ever

Ingredients

  • 2-3 lb whole pasture-raised chicken
  • Kosher salt
  • freshly ground black pepper
  • 2 tsp minced thyme (optional)

Instructions

  1. Preheat the oven to 450°F.
  2. Dry chicken very well with paper towels, inside and out.
  3. Salt and pepper the cavity, then truss the chicken (tie legs together with kitchen twine so the wings stay down and keep the cavity shut).
  4. Now, salt the chicken with a nice uniform coating that will result in a crisp, salty, flavorful skin (about 1 Tbsp). Season to taste with pepper.
  5. Place chicken in a roasting pan and put in pre-heated oven.
  6. Roast until done, 50 to 60 minutes. Remove from oven and add thyme to pan.
  7. Baste the chicken with the juices and thyme and let it rest for 15 minutes on a cutting board.
  8. Remove twine. Separate middle wing joint - and eat that immediately! Remove legs and thighs.
  9. Cut the breast down the middle and serve on the bone, with one wing joint still attached to each.
