Delicata Squash Pizza
Ingredients
- 1 delicata squash
- ½ medium red onion
- 2 Tbsp olive oil, divided
- 2 cloves garlic, minced
- 2 Tbsp shredded basil, plus extra for topping if desired
- 6oz Bellwether Whole Milk Basket Ricotta
- 1 ball Full Circle Bakery pizza dough
Instructions
- Allow your dough to proof at room temperature for 30 minutes.
- Preheat oven to 500˚F.
- Roll the pizza dough out in a shape that is roughly 8”x12”.
- Once oven is preheated, transfer to a sheet tray or pizza stone and par-bake in oven for 5 minutes.
- Cut the squash and onions into thin slices, about ⅛" thick. Set aside.
- Heat a large skillet over medium-low heat and add 1 Tbsp olive oil. Add in the squash and onion slices, stirring occasionally.
- Let squash and onion cook until they begin to brown, 8 to 10 minutes.
- Add garlic to skillet, cook for one more minute. Remove from heat and stir in the basil.
- Remove par-baked crust from the oven and brush with olive oil.
- Brush the par-baked crust with olive oil and spread ricotta evenly over center of dough.
- Distribute cooked squash and onion mixture evenly over the spread ricotta.
- Return to oven and bake for 10 to 12 minutes until crust has browned and cheese has melted. Sprinkle with extra basil and serve.
