Delicata Squash Egg in a Hole

Ingredients

• about 1/2 delicata squash, cut into thick slices
• avocado oil, for brushing
• 2 eggs
• salt & pepper, to taste
• herbs, for topping

Instructions

1. Preheat oven to 400°F.
2. Brush squash rounds with oil and bake for 10-15 minutes.
3. Remove and lower the oven temp to 350°F.
4. Crack an egg in each squash round and bake for 12 more minutes.
5. Season to taste and top with herbs.
