Cruciferous Chopped Salad with Peanut Dressing
Prep Time: 20 minutes | Serves 4-6
Ingredients
- 1 bunch green kale
- 1 bunch baby broccoli
- 1 bunch carrots
- 3 green onions
- 1/3 cup cilantro, chopped
- 1 avocado, sliced (optional)
- 1/2 cup roughly chopped salted peanuts (optional)
For the peanut dressing:
- 1/3 cup natural peanut butter (creamy or crunchy)
- 2 Tablespoons low sodium soy sauce or coconut aminos
- 2 Tablespoons fresh lime juice
- 1 Tablespoon honey
- 1 tablespoon rice vinegar
- 1 clove garlic
- Dash of crushed red pepper flakes
- 3 tablespoons water, to thin dressing as needed
Instructions
- Remove ribs and stems from kale, stack leaves on top of each other and thinly slice to give a shredded effect. Add to large bowl.
- Roughly chop broccoli - florets and stems - and add to the large bowl.
- Shred carrots and add to the large bowl.
- Roughly chop green onion and cilantro and add to the large bowl.
- Mince garlic then add to a small bowl and whisk in peanut butter, soy sauce, lime juice, honey, rice vinegar, red pepper flakes and water.
- Pour dressing over the salad and toss well to combine. For best results, let the salad sit for 15 to 30 minutes before serving to allow the flavors to meld and the kale to soften. Enjoy!
