Citrus-Cilantro Chicken Rice Bowls

Ingredients:

Citrus-Cilantro Salsa Verde

  • 1/4 cup olive oil
  • 1/4 cup lemon juice +zest from one lemon
  • 1/4 cup orange juice +zest from one orange
  • 1/2 bunch cilantro, stems and leaves
  • 1 Jalapeño or 1 Tbsp of chili powder
  • 5 cloves garlic
  • 2 tsp ground cumin
  • 1 tsp kosher salt

Instructions:

  1. Blend the salsa verde ingredients together until mostly smooth.
  2. Place chicken breasts in a large bowl, season lightly with salt and pepper.
  3. Pour 1/4 cup of the salsa verde over the chicken and toss to coat; Reserve the rest for serving. Cover and chill the chicken for at least 30 minutes or up to 12 hours.
  4. Heat a cast-iron or pan, or grill, over medium high-heat. Remove chicken from the marinade, shaking off any excess.
  5. Cook for 5-7 mins, then flip and continue to cook for 6 to 7 more minutes, or until cooked through and lightly charred.
  6. Transfer the chicken to a large plate or platter. Pour the reserved salsa verde over top and serve immediately with a side of brown rice.
