Chicken Salad
Ingredients:
- Leftover roasted chicken, shredded
- 1/3 cup finely diced celery
- 1/3 cup finely diced red onion
- 1/2 cup baby spinach finely chopped
- 3 fresh parsley sprigs, finely chopped
- 1/3 cup mayonnaise
- 1/3 cup Greek yogurt
- Salt & pepper, to taste
Instructions:
- Combine all ingredients in a big bowl; stir until everything is well combined. Enjoy!
*Chill for at least 20 mins for optimal flavor.
