Garlicky Rainbow Chard and Mushrooms

Ingredients
- 3 tablespoons extra-virgin olive oil
- 3 large garlic cloves, thinly sliced
- 1 bunch rainbow chard
- 8oz crimini mushrooms
- Kosher salt
- Freshly ground black pepper
Instructions
- Remove skin from garlic cloves and thinly slice cloves.
- Add 3 tablespoons olive oil and sliced garlic to a large pan or pot over medium heat.
- While the olive oil is heating, remove chard leaves from stems and set aside.
- Chop chard stems into 1/2" pieces and add to pan with garlic and olive oil.
- Increase heat to high and stir occasionally, until crisp-tender, about 5 minutes.
- Roughly chop the chard leaves, slice mushrooms and add to the pan.
- Season with salt and pepper and cook, stirring, until the leaves are softened and most of the liquid has evaporated, about 8 minutes.
- Serve hot, family style.
