Garlicky Rainbow Chard and Mushrooms

Prep Time: 5 minutes | Cook Time: 15-18 minutes | Serves 4

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 3 large garlic cloves, thinly sliced
  • 1 bunch rainbow chard
  • 8oz crimini mushrooms
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Remove skin from garlic cloves and thinly slice cloves.
  2. Add 3 tablespoons olive oil and sliced garlic to a large pan or pot over medium heat.
  3. While the olive oil is heating, remove chard leaves from stems and set aside.
  4. Chop chard stems into 1/2" pieces and add to pan with garlic and olive oil.
  5. Increase heat to high and stir occasionally, until crisp-tender, about 5 minutes.
  6. Roughly chop the chard leaves, slice mushrooms and add to the pan.
  7. Season with salt and pepper and cook, stirring, until the leaves are softened and most of the liquid has evaporated, about 8 minutes.
  8. Serve hot, family style.
