Atomic Cherry Tomato and Little Gem Salad
Ingredients
- 1 pint Atomic cherry tomatoes, halved
- 1/2 red onion, sliced
- 1-2 garlic cloves, roughly chopped
- ½ tsp salt
- ¼ tsp fresh ground pepper
- 4 Tbsp olive oil
- 1 Tbsp dijon mustard
- 1 head little gem lettuce
- 1 tsp fresh thyme
Instructions
- Halve cherry tomatoes, slice red onion, chopped garlic and set aside.
- Heat olive oil in a saucepan over medium high heat. If you're making this with the Garlicky Rainbow Chard and Mushrooms, use the same pan!
- Add tomatoes, onion and garlic to pan.
- Sprinkle with olive oil, salt and fresh ground pepper.
- Sautée for 15 minutes until cherry tomatoes pop and split.
- Remove half of the tomatoes to a bowl and add the dijon mustard.
- Using a masher or fork, mash the tomatoes and mix with the dijon mustard until a thick dressing is formed.
- Add additional salt and pepper if needed and set aside to cool - just to room temp.
- Plate your salad bowl with chopped little gem lettuce.
- Pour roasted tomato salad dressing onto the lettuce and top with remaining sautéed tomatoes, onion and garlic.
- Add fresh thyme, toss and serve!
