Atomic Cherry Tomato and Little Gem Salad

Ingredients

  • 1 pint Atomic cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1-2 garlic cloves, roughly chopped
  • ½ tsp salt
  • ¼ tsp fresh ground pepper
  • 4 Tbsp olive oil
  • 1 Tbsp dijon mustard
  • 1 head little gem lettuce
  • 1 tsp fresh thyme

Instructions

  1. Halve cherry tomatoes, slice red onion, chopped garlic and set aside.
  2. Heat olive oil in a saucepan over medium high heat. If you're making this with the Garlicky Rainbow Chard and Mushrooms, use the same pan!
  3. Add tomatoes, onion and garlic to pan.
  4. Sprinkle with olive oil, salt and fresh ground pepper.
  5. Sautée for 15 minutes until cherry tomatoes pop and split.
  6. Remove half of the tomatoes to a bowl and add the dijon mustard.
  7. Using a masher or fork, mash the tomatoes and mix with the dijon mustard until a thick dressing is formed. 
  8. Add additional salt and pepper if needed and set aside to cool - just to room temp.
  9. Plate your salad bowl with chopped little gem lettuce.
  10. Pour roasted tomato salad dressing onto the lettuce and top with remaining sautéed tomatoes, onion and garlic.
  11. Add fresh thyme, toss and serve!
