Asian-Style Chopped Salad

Ingredients

  • Homemade Sesame Ginger Salad Dressing OR Thai Peanut Dressing
  • 1 large or 2 small bok choy
  • ¼ head red or green napa cabbage
  • 2 large carrots
  • ½ cup fresh cilantro

Salad Topping (optional)

  • fried wonton strips
  • ¼ cup roasted almonds, chopped
  • 1 bunch green onions, chopped

Instructions

  1. Make 1 batch of your choice of salad dressing. Refrigerate until needed.
  2. Wash and pat dry all vegetables.
  3. Slice bok choy and red cabbage into ¼” inch strips.
  4. Peel, then grate the carrot into thin strips or ribbons, about ¼” thick.
  5. Add cabbage and carrots to serving bowl.
  6. Roughly chop cilantro and add to bowl.
  7. Top with wonton strips, chopped almonds and green onions, if desired.
  8. Drizzle dressing over the salad, to taste.
  9. Toss to combine. Serve and enjoy!
