15 Minute Oven Baked Rock Cod
Ingredients
- 2 lbs Wild Rock Cod filets, rinsed and pat dry
- 1/2 teaspoon salt
- 2 Tablespoons lemon juice (freshly squeezed)
- 6 dashes cayenne pepper
- 3 Tablespoons olive oil
- 2 Tablespoons chopped parsley
Instructions
- Preheat oven to 400°F
- Arrange the cod fillets on baking tray.
- Drizzle the olive oil onto the fish, follow by lemon juice, salt and cayenne pepper.
- Bake the cod in the oven for 10 - 12 minutes, depends on the thickness of the cod.
- Garnish with parsley and serve immediately or store in an airtight container in the fridge for 3-4 days for use on salads or dinner later in the week!
