10-Minute Armenian Cucumber and Tomato Salad
Total Time: 10 minutes | Serves 4-6
Ingredients
- 2 Armenian Cucumbers peeled and diced
- 1 Cup Cherry Tomatoes halved
- 10 fresh basil leaves
- 1 bunch green onions both whites and greens, chopped
- ⅓ cup olive oil
- 1 lemon juiced
- 1 teaspoon sea salt
- 2 Tablespoons sumac (or Za'tar or lemon pepper)
Instructions
- Dice cucumbers, halve tomatoes, roughly chop basil and green onions then add to a large mixing bowl.
- Add in your wet ingredients, salt and sumac and toss to fully combine.
- Serve salad immediately, or store any leftovers in an airtight container in the fridge for up to five days. Enjoy!
